Color and body: The first element to pay attention to when tasting tequila is its colour. Consider the different types of tequila, ranging from a selection of aged or white. All good tequila will show a shimmering silver or gold halo on its edge. In addition, by swirling it you can also see if it has body, by observing as small drops slide down the the glass.
Scent: Tequila scents are so unique that there can be up to 600 different possible variations. This complex symphony of aromatic notes represents the entire history through which said tequila has evolved, from the "terroir" in which it has been planted, to the harvesting, cooking, grinding, distillation and aging processes. To uncover each of its aromas, it is recommended to tilt the glass slightly before proceeding to inhale through your nose, with your mouth slightly open.
Taste: It is recommended that prior to tasting, the palate be prepared and neutralized with a small piece of bread, followed by a sip of water. This will allow the senses to better detect each of the flavours and aromas that make up the selected tequila. To carry out the tasting, experts recommend keeping the drink in your mouth for a few seconds and then exhaling through it to reveal each of its flavours more noticeably.
Tequila pairing
To taste tequila properly, it is necessary to pair it with foods that harmonize with its flavour. For example, if you opt for a tequila with a shorter aging period, that is, a white tequila, the ideal pairing will be achieved with products from the sea, such as fish and shellfish, which create a perfect combination with the flavours of these distillates.
If you prefer a tequila with a longer aging period, that is, a reposado or an añejo tequila, the recommendation is to pair it with flavours such as red meat or even with desserts, as they are perfect companions for this type of tequila due to their acid concentration and sweetness, respectively.
